If you do, please keep in mind the "steamer" types of canning devices; it appears it might be easier on the hands, and use .5 jars if there isn't someone to help with the lifting, etc. The electric "processors," "choppers," and "peelers" also make more possible :)


: I'm thinking about taking up canning myself. During Christmas, my Aunt gave me some homemade jams and jellies. One of them were Cactus Jelly, my goodness to think something that good could come out of prickly pear cactus is unbelievable. I think you and my Aunt have my attention here. Sounds like its fun and rewarding. Melani
